Chicken thighs slow-cooked with sweet potatoes, carrots, kale, and fire roasted tomatoes in a rich sauce flavoured with peanut butter, fresh ginger, spices and cilantro. There are endless versions of this traditional stew across Western Africa, but this one most resembles a Senegalese dish called "maafe". Best served with flatbread (not included).
