Vegan Elote Chowder

Inspired by the Mexican street food Elotes - roasted sweet corn, grilled green onions and jalapenos, cashew cream, lime, cilantro and smoked paprika. A light, sweet and smoky soup that is best served with a garnish of feta, crushed tortilla chips and a lime wedge. Mild-medium spice.
