French Onion Soup

Onions caramelized in butter for hours then added to a beef stock and flavoured with balsamic vinegar, fresh thyme and a splash of red wine. To serve the classic way, cut a rustic loaf of bread into hunks and toast until dry. Add to soup in a heat-proof dish and top with grated cheese (preferrably gruyere or Swiss) and broil until bubbling. Simply the best!
